  • Method of Preparation: Boil slightly salted water in a large pot. Place the pasta in the pot and cook for 6 to 8 minute (until al dente) and then drain. In skillet heat ¼ cup olive oil, add garlic & onion and cook them until tender. Mix zucchini, squash, tomatoes, bell pepper and basil and season the mixture with red pepper. Stir the vegetables in remaining oil & continue cooking for 10 mins. Mix pasta and cheese into the skillet and continue cooking for 5 minutes.

#Pasta Recipe 2- Garlic Roasted Broccoli & Pasta:

  • Ingredients: 6 cups fresh broccoli florets, 1/2 teaspoon salt, 1/4 teaspoon black pepper, 6 tablespoons garlic infused olive oil, 12 ounces pasta, 1/2 cup chicken broth and 1/4 cup grated Parmesan cheese.
  • Method of Preparation: Heat oven to 400 degrees F and bring in a large pot of slightly salted water to boil. Mix broccoli, salt and pepper in a medium sized bowl and drizzle with garlic olive oil and stir until coated. Place the mixture on a large rimmed baking sheet and roast at 400 degrees F for 13 minutes (stir twice). Cook pasta (drain the water) then add the broccoli mixture to the pasta and stir in the chicken broth; lastly add the Parmesan cheese and serve hot.
